Hotel Head Chef

We are recruiting a hotel head chef for our prestigious client in Reading, Berkshire
Scope and Purpose of Role:
To ensure the smooth day to day running of all the all Kitchen operations through the interpretation of the company mission statement.
Effectively managing the kitchen, champion and maintain consistency of brand standards, being product and customer focused with a clear focus on training and development.
To manage an effective cost programme to ensure budgeted sales and profit targets are met.
Key Responsibilities:
To take control, accountability and ownership of the All Kitchen outlets
To work in conjunction with Operations Manager and the kitchen team to ensure smooth running of the kitchen
To ensure there is a high standard of cleanliness, maintenance and safety in the kitchen at all times
To act on all aspects of kitchen development and management
To be responsible for food standards throughout the hotel
To ensure achievement of departmental figures
Participate in guest activities that promote the hotel product and its services
To be aware of competition and market trends
Work within the departmental budget figures, maximising revenue and minimising expenditure
To work alongside the kitchen team and lead by example
To control expenses to agreed levels
Coach and lead the team to ensure that our guests receive an exceptional level of service and want to return
Encourage the team to work flexibly, which will develop their knowledge and assist in the event of absence cover, and allow service standards to be maintained
To produce a departmental training plan, action the training and evaluate to ensure that the training is relevant and achieves the required outcome
To carry out departmental appraisal reviews in a timely and appropriate manner
Ensure that the team is constantly improving their product knowledge to maximise revenue and the service provided
To ensure that the image of the hotel is upheld at all times
To ensure all allergen paperwork is correctly set up and filedand all relevant teams are aware of the location of the file and the information contained within in
Ensure that all food costings are completed and filed. Any new menu dishes to be costed the same way at the introduction of the new dish
Understand your role and responsibilities in terms of the hotel Health and Safety Policy and to produce and update departmental risk assessments and train the team against them. Ensure the assessments are reviewed in the event of an accident occurring
To follow correct accident reporting procedures at all times
To ensure the team maintain kitchen cleanliness at all time, remove and report any hazards
To ensure there all information from the Health and Safety meetings is communicated to all team members
To ensure compliance throughout the department and hotel with brand, hotel and company operating standards
To take full responsibility for own team and not put blame on others for things going wrong
To be fully conversant with the hotel policy on:
Fire and Bomb Evacuation, security procedures, health and safety policy, personnel and training procedures
People:
Fully accountable for team members with the unit in terms on recruitment, performance management and reviews
Liase with Operational Manager with any issues which may be classed as high risk
Act as a role model in terms of values, professional ethics and conduct
Identify training needs within the team and deliver or source appropriate training
Communicate throughout the team to ensure all members are aware of current developments within the company
Display a pro-active and leading role in terms of service, culture, development, team image, systems, procedures and skills development
Quality:
Ensure all appropriate brand Standard Operating procedures are adhered to
Source the most appropriate suppliers and ensure quality levels are delivered in a cost efficient manner
Utilise brand metrics to ensure quality measures are maintained throughout the company. Be aware and communicate with team all guest feedback
Profit:
Prepare and manage departmental budgets
Be directly involved in developing and executing revenue strategies and sales initiatives- while continually developing your teams to do the same
Negotiate with suppliers on a group-wide basis to ensure maximum profitability throughout the group
Coordinate and control with initiatives all issues relating to costs, expenses, wastage, breakages, security and stock control
Pro-actively pursue all practices in-line with company environmental and energy savings initiatives
Strategy:
Take a pro-active approach to ensuring the continued long term success of Ramada Solihull Hotel and the Jiyaan restaurant.
Monitor and support the chefs in Jiyaan Kitchen, Monstering cleanliness and Best Practices.
Project manage any key strategic priorities ensuring effective leadership of any working party; clear, concise and timely communication to all stakeholders, development and management of associated timelines; delivery of work streams in line with agreed deadlines
Work with key stakeholders to drive improvements to the business
Effectively manage all internal relationships
Effectively manage all external relationships with external contacts, professional advisors and official bodies
General:
Comply with the company codes of conduct at all times
Familiarise yourself with the company policies and procedures plus employee handbook and lead by example in demonstrating behaviours that we expect all employees to display, Obtain a Copy from HR department
Perform other tasks at the level of the role as directed by SGS in pursuit of the achievement of business goals
Have the desire and ability to improve your knowledge and abilities through on-going training and development
Ability to work as part of a diverse team with colleagues from different viewpoints, cultures and countries
Produce reports as required in line with current guidelines
Hold and attend meetings as appropriate and actively contribute to all forums
Demonstrate a comprehensive understanding and awareness of all policies and procedures relating to Health, Hygiene and Fire Life Safety
Familiarise yourself with emergency and evacuation procedures
